This is the lot we hand people who say they do not like light roasts. It is washed and roasted medium-light, so it is clean and sweet rather than sharp, and the acidity reads as red apple instead of citrus. Aldemar Truijillo has sold to us for four harvests and ferments in tile tanks for 18 hours before drying on raised beds, which is why the cup is this consistent year to year.
